Ingredients
  

For the Meatballs:
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Chimichurri Sauce:
  • 1 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 3 cloves garlic minced
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil
  • 1/4 teaspoon red pepper flakes optional

Method
 

Preheat oven:
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Make the meatballs:
  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and pepper. Mix until combined.
  2. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
Bake:
  1. Bake the meatballs for 15-20 minutes, until golden brown and cooked through.
  2. Make the chimichurri sauce:
  3. In a small bowl, mix together parsley, cilantro, minced garlic, red wine vinegar, salt, black pepper, olive oil, and red pepper flakes (if using) until well combined.
Serve:
  1. Drizzle chimichurri sauce over the meatballs or serve it as a dipping sauce.
