Ingredients

  • 1 lb breakfast sausage pork or turkey
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional, for a little kick
  • 1 can 16 oz refrigerated biscuit dough (8 large biscuits)
  • 1 cup shredded cheddar cheese

Method

Cook the Sausage:
  1. In a large skillet, cook sausage over medium heat until browned and crumbled. Do not drain completely — leave about 2 tbsp drippings for flavor.
Make the Gravy:
  1. Sprinkle flour over sausage and stir well to coat. Slowly whisk in milk, stirring constantly until thickened (5–7 minutes). Season with salt, pepper, garlic powder, and cayenne if using.
Assemble the Casserole:
  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Cut biscuits into quarters and spread half in the dish.
  3. Pour sausage gravy evenly over biscuits.
  4. Sprinkle shredded cheddar cheese.
  5. Top with remaining biscuit pieces.
Bake:
  1. Bake uncovered for 30–35 minutes, or until biscuits are golden and cooked through.
Serve:
  1. Let rest for 5 minutes before serving warm.

Notes

Make Ahead: Assemble the casserole the night before, cover, refrigerate, and bake in the morning.
Cheese Swap: Try pepper jack or mozzarella for a twist.
Extra Creamy: Add a splash of heavy cream to the gravy for richer flavor.
Serving Suggestion: Pair with scrambled eggs or fresh fruit for a complete breakfast.
Storage: Leftovers keep 3 days in the fridge. Reheat covered in the oven for best texture.
