Method
- Make simple syrup: In a small saucepan, combine sugar and water. Heat until sugar dissolves. Cool completely.
- Blend cherries, lemon juice, vanilla (if using), and cooled syrup in a blender until smooth.
- Strain through a fine mesh sieve to remove skins if desired (optional but smoother).
- Chill mixture in the fridge for 1 hour.
- Freeze in an ice cream maker according to instructions OR pour into a shallow dish and freeze, stirring every 30 mins until slushy, then solid.
- Scoop and enjoy!
