Ingredients
  

  • 4 cups fresh cherries pitted
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tbsp lemon juice
  • Optional: 1 tsp vanilla extract or a splash of cherry liqueur

Method
 

  1. Make simple syrup: In a small saucepan, combine sugar and water. Heat until sugar dissolves. Cool completely.
  2. Blend cherries, lemon juice, vanilla (if using), and cooled syrup in a blender until smooth.
  3. Strain through a fine mesh sieve to remove skins if desired (optional but smoother).
  4. Chill mixture in the fridge for 1 hour.
  5. Freeze in an ice cream maker according to instructions OR pour into a shallow dish and freeze, stirring every 30 mins until slushy, then solid.
  6. Scoop and enjoy!
