Preheat Oven:
- Preheat to 300°F (150°C). Line a baking sheet with parchment paper.
Whip Egg Whites:
- In a clean bowl, beat egg whites and cream of tartar with an electric mixer until stiff peaks form.
Mix Yolks:
- In another bowl, whisk together egg yolks, softened cream cheese, baking powder, and salt until smooth.
Fold Together:
- Gently fold yolk mixture into the beaten egg whites, being careful not to deflate.
Shape Rounds:
- Spoon mixture onto prepared baking sheet into 6 even circles. Spread slightly to flatten (they will puff when baking).
Bake:
- Bake 25–30 minutes, until golden brown and firm to the touch.
Cool & Enjoy:
- Let cool on a rack — they will firm up more as they cool.

Store in an airtight container in the fridge for up to 4 days or freeze with parchment between layers.
