Ingredients
  

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes optional
  • Freshly grated Parmesan cheese optional, for serving
  • Fresh basil or parsley optional, for garnish

Instructions
 

Prepare the zucchini:

  • Wash and trim the ends of the zucchinis.
  • Use a spiralizer, julienne peeler, or mandoline to create long, thin noodles from the zucchini.

Sauté the garlic:

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes, until the garlic is fragrant but not browned.

Cook the zoodles:

  • Add the zucchini noodles to the skillet and toss gently to coat them in the garlic-infused oil.
  • Cook for 3-5 minutes, stirring occasionally, until the zoodles are tender but still have a slight crunch (al dente).
  • Season with salt and black pepper to taste.

Serve:

  • Remove the skillet from heat and transfer the zoodles to serving plates.
  • Optionally, sprinkle with freshly grated Parmesan cheese and garnish with fresh basil or parsley.
  • Serve immediately as a light main dish or a side.
