Ingredients
  

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes optional
  • Freshly grated Parmesan cheese optional, for serving
  • Fresh basil or parsley optional, for garnish

Method
 

Prepare the zucchini:
  1. Wash and trim the ends of the zucchinis.
  2. Use a spiralizer, julienne peeler, or mandoline to create long, thin noodles from the zucchini.
Sauté the garlic:
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes, until the garlic is fragrant but not browned.
Cook the zoodles:
  1. Add the zucchini noodles to the skillet and toss gently to coat them in the garlic-infused oil.
  2. Cook for 3-5 minutes, stirring occasionally, until the zoodles are tender but still have a slight crunch (al dente).
  3. Season with salt and black pepper to taste.
Serve:
  1. Remove the skillet from heat and transfer the zoodles to serving plates.
  2. Optionally, sprinkle with freshly grated Parmesan cheese and garnish with fresh basil or parsley.
  3. Serve immediately as a light main dish or a side.
