Instructions
Start by brewing a strong pot of coffee and letting it cool to room temperature.
Separate the egg yolks from the whites, and beat the yolks with sugar until pale and fluffy.
Fold in the mascarpone cheese until smooth and creamy.
In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture.
Dip the ladyfingers into the cooled coffee and layer them in the bottom of a serving dish.
Spread a layer of the mascarpone mixture over the ladyfingers, then repeat the layers until you've used up all the ingredients.
Dust the top with cocoa powder and refrigerate for at least 4 hours (overnight is even better!) to allow the flavors to meld together.
