Instructions
Boil the eggs:
Place eggs in a saucepan and cover with water. Bring to a boil, then reduce to a simmer for 10 minutes.
Remove eggs and place them in ice water to cool.
Prepare the eggs:
Peel the eggs and slice them in half lengthwise.
Carefully scoop out the yolks into a bowl and set the whites aside.
Make the filling:
Mash the yolks with a fork.
Mix in mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
Fill the egg whites:
Spoon or pipe the yolk mixture back into the egg white halves.
Garnish:
Sprinkle with paprika and add fresh herbs if desired.
Serve:
Arrange the deviled eggs on a platter and serve immediately, or chill them until ready to serve.
