Thai Peanut Tofu Taco

Ingredients
  

  • - 1 block of extra-firm tofu pressed and cubed
  • - 1/4 cup soy sauce
  • - 2 tablespoons lime juice
  • - 2 tablespoons peanut butter
  • - 2 cloves garlic minced
  • - 1 tablespoon sriracha or to taste
  • - 1 tablespoon sesame oil
  • - 1 tablespoon maple syrup
  • - 1/4 cup chopped peanuts
  • - 1/4 cup chopped cilantro
  • - 8 small flour tortillas
  • - 1 cup shredded cabbage
  • - 1 carrot julienned
  • - Lime wedges for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together soy sauce, lime juice, peanut butter, minced garlic, sriracha, sesame oil, and maple syrup to make the marinade.
  3. Toss the cubed tofu in the marinade until well coated, then let it marinate for at least 15 minutes.
  4. Spread the marinated tofu cubes on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  5. While the tofu is baking, warm the tortillas in a dry skillet or microwave.
  6. Assemble the tacos by placing a scoop of shredded cabbage and julienned carrots on each tortilla, followed by a generous portion of the baked tofu.
  7. Garnish with chopped peanuts, cilantro, and a squeeze of lime juice.
  8. Serve immediately and devour those delicious tacos like there's no tomorrow!
