Ingredients
  

For the base:

  • 2 cups cooked jasmine rice or brown rice

For the chicken:

  • 1 pound boneless skinless chicken breasts (sliced into thin strips)
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1 garlic clove minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes optional

For the peanut sauce:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 garlic clove minced
  • 1/4 teaspoon red pepper flakes optional
  • 2-3 tablespoons warm water to thin the sauce
  • For the vegetables:
  • 1 cup shredded carrots
  • 1 cup red bell pepper sliced
  • 1 cup cucumber sliced
  • 1 cup red cabbage shredded
  • 1/4 cup fresh cilantro chopped

Optional additional toppings:

  • 1/4 cup chopped peanuts
  • 1 lime cut into wedges
  • 1/4 cup green onions chopped
  • 1/4 cup fresh mint or basil chopped

Instructions
 

Cook the rice:

  • Prepare the jasmine or brown rice according to package instructions.

Prepare the chicken:

  • In a medium bowl, combine the soy sauce, fish sauce, lime juice, brown sugar, minced garlic, ground ginger, and red pepper flakes (if using).
  • Add the sliced chicken to the marinade and let it sit for at least 15 minutes.
  • Heat the olive oil in a large skillet over medium heat. Add the marinated chicken and cook until fully cooked through and browned, about 6-8 minutes.

Prepare the peanut sauce:

  • In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or brown sugar, lime juice, sesame oil, minced garlic, and red pepper flakes (if using). Add warm water a little at a time until the sauce reaches your desired consistency.

Prepare the vegetables:

  • While the chicken is cooking, prepare the vegetables by shredding the carrots and red cabbage, slicing the red bell pepper and cucumber, and chopping the cilantro.

Assemble the Thai peanut chicken bowls:

  • Divide the cooked rice among bowls.
  • Top each bowl with a portion of the cooked chicken.
  • Arrange the shredded carrots, red bell pepper slices, cucumber slices, and shredded red cabbage around the chicken.
  • Drizzle with the peanut sauce.
  • Garnish with chopped cilantro and any optional additional toppings like chopped peanuts, lime wedges, green onions, and fresh mint or basil if desired.
