Spring Vegetable Quiche:

Ingredients
  

  • 1 pie crust store-bought or homemade
  • 1 cup asparagus chopped
  • 1 cup cherry tomatoes halved
  • 1 cup spinach chopped
  • 6 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheese cheddar, Swiss, or your choice

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Place the pie crust in a pie dish and crimp the edges.
  • Spread the chopped vegetables evenly over the crust.
  • In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour this mixture over the vegetables.
  • Sprinkle shredded cheese over the top.
  • Bake for 35-40 minutes or until the quiche is set and the crust is golden brown. Allow it to cool slightly before slicing and serving.
