Ingredients
  

  • 2 pounds beef chuck roast cut into 1-inch cubes
  • 3 large carrots peeled and sliced
  • 3 medium potatoes peeled and cubed
  • 2 stalks celery sliced
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 1/4 cup tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1/4 cup all-purpose flour optional, for thickening
  • 2 tablespoons olive oil for browning the beef
  • Fresh parsley optional, for garnish

Method
 

Prepare the beef:
  1. Season the beef cubes with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Brown the beef in batches, ensuring all sides are seared. Transfer the browned beef to the slow cooker.
Add vegetables to the slow cooker:
  1. Add the carrots, potatoes, celery, onion, and garlic to the slow cooker with the beef.
Prepare the stew base:
  1. In a small bowl, mix the beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves.
  2. Pour the mixture over the beef and vegetables in the slow cooker.
Cook the stew:
  1. Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
Thicken the stew (optional):
  1. If you prefer a thicker stew, remove 1/2 cup of the cooking liquid and mix it with 1/4 cup of flour until smooth.
  2. Stir this mixture back into the stew and cook on high for an additional 30 minutes.
Serve:
  1. Remove the bay leaves before serving.
  2. Garnish with fresh parsley if desired.
  3. Serve the beef stew hot, with crusty bread or over a bed of mashed potatoes.
