Ingredients
  

  • 1 pint cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1 baguette sliced into 12 pieces
  • 8 oz burrata cheese
  • Fresh basil leaves for garnish

Method
 

Preheat the Oven:
  1. Set the oven to 400°F (200°C).
Roast the Tomatoes:
  1. Place cherry tomatoes on a baking sheet lined with parchment paper.
  2. Drizzle with olive oil and balsamic vinegar, then sprinkle with garlic, salt, and pepper.
  3. Roast for 15-20 minutes or until the tomatoes are soft and slightly caramelized.
Toast the Baguette:
  1. Arrange baguette slices on another baking sheet.
  2. Brush lightly with olive oil.
  3. Toast in the oven for 5-7 minutes until golden brown.
Assemble the Bruschetta:
  1. Place a generous piece of burrata on each toasted baguette slice.
  2. Top with a spoonful of roasted tomatoes.
  3. Garnish with fresh basil leaves.
Serve:
  1. Arrange on a serving platter and optionally drizzle with balsamic glaze.
