Preheat your grill or grill pan over medium-high heat.
Clean the Portobello mushrooms by gently wiping them with a damp cloth or paper towel to remove any dirt. Remove the stems.
In a small bowl, mix together some olive oil, balsamic vinegar, salt, and pepper. Brush this mixture onto both sides of the Portobello mushrooms.
Place the mushrooms on the grill or grill pan, gill-side down. Cook for about 4-5 minutes on each side, or until they are tender and slightly charred.
While the mushrooms are cooking, you can toast the burger buns on the grill if desired.
Once the mushrooms are cooked, assemble your burgers. Place a mushroom on the bottom half of each burger bun. If using cheese, place a slice on top of each mushroom while they're still hot so it melts slightly.
Top the mushrooms with sliced onion, tomato, lettuce leaves, and any other burger condiments you like.
Place the top half of the burger bun on top, and serve immediately.
