Portobello Mushroom Burgers

Equipment

  • Grill or grill pan
  • Tongs or spatula for flipping mushrooms
  • Small bowl for mixing marinade
  • Basting brush for applying marinade
  • Knife for slicing vegetables
  • Cutting board

Ingredients
  

  • 4 large Portobello mushrooms
  • 4 burger buns
  • 4 slices of cheese optional
  • 1 red onion sliced
  • 1 large tomato sliced
  • Lettuce leaves
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper to taste
  • Burger condiments of your choice such as ketchup, mustard, mayo

Instructions
 

  • Preheat your grill or grill pan over medium-high heat.
  • Clean the Portobello mushrooms by gently wiping them with a damp cloth or paper towel to remove any dirt. Remove the stems.
  • In a small bowl, mix together some olive oil, balsamic vinegar, salt, and pepper. Brush this mixture onto both sides of the Portobello mushrooms.
  • Place the mushrooms on the grill or grill pan, gill-side down. Cook for about 4-5 minutes on each side, or until they are tender and slightly charred.
  • While the mushrooms are cooking, you can toast the burger buns on the grill if desired.
  • Once the mushrooms are cooked, assemble your burgers. Place a mushroom on the bottom half of each burger bun. If using cheese, place a slice on top of each mushroom while they're still hot so it melts slightly.
  • Top the mushrooms with sliced onion, tomato, lettuce leaves, and any other burger condiments you like.
  • Place the top half of the burger bun on top, and serve immediately.
