Pineapple Coconut Punch

Light, fruity, and kissed with coconut, this punch tastes like a beach vacation in a glass. Serve it chilled with ice and fresh fruit for a show-stopping drink everyone loves.

Ingredients
  

  • 4 cups pineapple juice chilled
  • 2 cups coconut milk or coconut cream well shaken
  • 2 cups lemon-lime soda or sparkling water
  • ½ cup cream of coconut such as Coco López
  • 1 cup crushed ice
  • Optional garnish: pineapple slices maraschino cherries, orange slices

Method
 

Mix the Base
  1. In a large pitcher or punch bowl, whisk together pineapple juice, coconut milk, and cream of coconut until smooth.
Add Fizz
  1. Slowly stir in lemon-lime soda or sparkling water just before serving.
Chill & Serve
  1. Add crushed ice and stir gently. Pour into glasses and garnish as desired.

Notes

Creamier punch: Use coconut cream instead of coconut milk.
Lighter version: Swap soda for sparkling water.
Make it ahead: Mix everything except soda and ice up to 24 hours in advance.
Adult version: Add white rum, coconut rum, or pineapple vodka to taste.
Frozen option: Blend with ice for a slushy punch.
