Ingredients
  

  • 4 ripe peaches peeled, pitted, and diced
  • 1 red bell pepper diced
  • 1/2 red onion finely chopped
  • 1 jalapeño pepper seeded and finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 1 tablespoon honey or agave syrup
  • Salt and black pepper to taste

Method
 

Prepare the ingredients:
  1. Peel, pit, and dice the peaches.
  2. Dice the red bell pepper.
  3. Finely chop the red onion and jalapeño pepper.
  4. Chop the fresh cilantro.
Combine the ingredients:
  1. In a large bowl, combine the diced peaches, red bell pepper, red onion, jalapeño pepper, and chopped cilantro.
Add the dressing:
  1. Squeeze the lime juice over the salsa mixture.
  2. Drizzle the honey or agave syrup over the mixture.
  3. Add salt and black pepper to taste.
Mix well:
  1. Gently toss all the ingredients together until well combined.
Chill and serve:
  1. Cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld.
  2. Serve chilled with tortilla chips, grilled chicken, fish, or as a topping for tacos.
