Ingredients
  

For the muffins:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh peaches peeled, pitted, and chopped
For the topping (optional):
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Method
 

Preheat the oven:
  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or lightly grease the cups.
Prepare the dry ingredients:
  1. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
Prepare the wet ingredients:
  1. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
Combine ingredients:
  1. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  2. Gently fold in the chopped peaches.
Scoop the batter:
  1. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Add topping (optional):
  1. In a small bowl, mix the granulated sugar and ground cinnamon for the topping.
  2. Sprinkle a small amount of the cinnamon-sugar mixture on top of each muffin.
Bake the muffins:
  1. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
Cool and serve:
  1. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
