Method
Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or lightly grease the cups.
Prepare the dry ingredients:
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
Prepare the wet ingredients:
- In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
Combine ingredients:
- Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in the chopped peaches.
Scoop the batter:
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Add topping (optional):
- In a small bowl, mix the granulated sugar and ground cinnamon for the topping.
- Sprinkle a small amount of the cinnamon-sugar mixture on top of each muffin.
Bake the muffins:
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
Cool and serve:
- Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
