Ingredients
  

For the crust:
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup ice water
For the filling:
  • 4-5 ripe peaches peeled, pitted, and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg optional
For assembly:
  • 1 egg beaten, for egg wash
  • 1 tablespoon coarse sugar for sprinkling

Method
 

Make the crust:
  1. In a large bowl, whisk together the flour, granulated sugar, and salt.
  2. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  3. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Do not overmix.
  4. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Prepare the filling:
  1. In a large bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, ground cinnamon, and ground nutmeg (if using). Toss gently to coat the peaches evenly.
Assemble the galette:
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
  3. Arrange the peach filling in the center of the dough, leaving a 2-inch border around the edges.
  4. Fold the edges of the dough over the peaches, pleating as needed to create a rustic look. The center will be open.
  5. Brush the folded edges of the dough with the beaten egg and sprinkle with coarse sugar.
Bake the galette:
  1. Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  2. Allow the galette to cool for at least 10 minutes before slicing and serving.
Serve:
  1. Serve the peach galette warm or at room temperature. Optionally, top with a scoop of vanilla ice cream or a dollop of whipped cream.
