Ingredients
  

For the filling:
  • 8 fresh peaches peeled, pitted, and sliced
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
For the batter:
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted

Method
 

Preheat the oven:
  1. Preheat your oven to 375°F (190°C).
Prepare the peach filling:
  1. In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss until the peaches are evenly coated.
Prepare the batter:
  1. In another mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
  2. Stir in the milk and melted butter until the batter is smooth and well combined.
Assemble the cobbler:
  1. Pour the batter into a 9x13-inch baking dish.
  2. Spoon the peach mixture evenly over the batter. Do not stir; the batter will rise up around the peaches as it bakes.
Bake the cobbler:
  1. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the filling is bubbly.
Cool and serve:
  1. Allow the peach cobbler to cool for at least 10 minutes before serving. Serve warm, optionally topped with a scoop of vanilla ice cream or whipped cream.
