Ingredients
  

For the salad:

  • 4 cups mixed greens such as arugula, spinach, and baby kale
  • 2 ripe peaches pitted and sliced
  • 4 ounces prosciutto sliced thin
  • 1/4 cup crumbled goat cheese or feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 1/4 red onion thinly sliced

For the dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions
 

Prepare the ingredients:

  • Wash and dry the mixed greens.
  • Pit and slice the peaches.
  • Slice the prosciutto into strips if not pre-sliced.
  • Crumble the goat cheese or feta cheese.
  • Toast the pecans or walnuts in a dry skillet over medium heat until fragrant (about 2-3 minutes).

Make the dressing:

  • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and black pepper until well combined.

Assemble the salad:

  • In a large salad bowl, combine the mixed greens, peach slices, prosciutto, crumbled cheese, and red onion.
  • Drizzle the dressing over the salad and toss gently to coat all ingredients.

Add the nuts:

  • Sprinkle the toasted pecans or walnuts over the top of the salad.
