Ingredients
  

For the salad:
  • 4 cups mixed greens such as arugula, spinach, and baby kale
  • 2 ripe peaches pitted and sliced
  • 4 ounces prosciutto sliced thin
  • 1/4 cup crumbled goat cheese or feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 1/4 red onion thinly sliced
For the dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method
 

Prepare the ingredients:
  1. Wash and dry the mixed greens.
  2. Pit and slice the peaches.
  3. Slice the prosciutto into strips if not pre-sliced.
  4. Crumble the goat cheese or feta cheese.
  5. Toast the pecans or walnuts in a dry skillet over medium heat until fragrant (about 2-3 minutes).
Make the dressing:
  1. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and black pepper until well combined.
Assemble the salad:
  1. In a large salad bowl, combine the mixed greens, peach slices, prosciutto, crumbled cheese, and red onion.
  2. Drizzle the dressing over the salad and toss gently to coat all ingredients.
Add the nuts:
  1. Sprinkle the toasted pecans or walnuts over the top of the salad.
Serve:
  1. Serve immediately as a fresh and elegant starter or main course.
