Ingredients
  

For the Carrots
  • 1 lb carrots peeled and cut into sticks
  • 2 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste
For the Dip
  • ½ cup Greek yogurt
  • 1 clove garlic minced
  • 1 tsp smoked paprika
  • 1 tsp lemon juice
  • Salt & pepper to taste

Method
 

Preheat Oven
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare Carrots
  1. Toss carrot sticks with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread in a single layer on the baking sheet.
Roast
  1. Roast for 20–25 minutes, turning halfway, until carrots are tender and slightly caramelized.
Make the Dip
  1. In a small bowl, combine Greek yogurt, minced garlic, smoked paprika, lemon juice, salt, and pepper. Mix until smooth.
Serve
  1. Serve warm roasted carrots with zesty dip on the side.
