Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz Rotel (diced tomatoes with green chilies)
  • 1 cup salsa
  • 1 cup cooked rice
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend divided
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 10 small corn tortillas cut into quarters

Instructions
 

  • Preheat Oven: Set to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Cook Meat: In a skillet over medium heat, cook ground beef until browned. Drain excess grease, then stir in taco seasoning and Rotel.
  • Mix Ingredients: In a large bowl, combine meat mixture, black beans, corn, salsa, rice, sour cream, chili powder, cumin, and 1 cup of cheese.
  • Layer the Casserole: Spread a layer of tortilla pieces in the baking dish, followed by half of the meat mixture. Repeat layers, ending with the remaining cheese on top.
  • Bake: Bake uncovered for 25-30 minutes or until cheese is bubbly and golden.
  • Serve: Let cool slightly and garnish with chopped cilantro, avocado, or jalapeños!
