- Preheat Oven: Set to 375°F (190°C). Grease a 9x13-inch baking dish.
- Cook Meat: In a skillet over medium heat, cook ground beef until browned. Drain excess grease, then stir in taco seasoning and Rotel.
- Mix Ingredients: In a large bowl, combine meat mixture, black beans, corn, salsa, rice, sour cream, chili powder, cumin, and 1 cup of cheese.
- Layer the Casserole: Spread a layer of tortilla pieces in the baking dish, followed by half of the meat mixture. Repeat layers, ending with the remaining cheese on top.
- Bake: Bake uncovered for 25-30 minutes or until cheese is bubbly and golden.
- Serve: Let cool slightly and garnish with chopped cilantro, avocado, or jalapeños!
