Ingredients
  

  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • ΒΌ cup extra virgin olive oil
  • 1 tbsp honey or maple syrup optional for sweetness
  • Salt and pepper to taste

Method
 

Mix the Base:
  1. In a small bowl or jar, combine lemon juice, Dijon mustard, minced garlic, and honey (if using).
Whisk or Shake:
  1. Slowly whisk in olive oil until the vinaigrette is emulsified and smooth. If using a jar, shake vigorously.
Season:
  1. Add salt and pepper to taste.
Serve:
  1. Drizzle over salads, roasted veggies, or grain bowls.
Store:
  1. Keep any leftovers in the fridge for up to a week. Shake before using.
