Dijon mustard

honey or maple syrup

Salt and pepper to taste
Instructions
Mix the Base:
In a small bowl or jar, combine lemon juice, Dijon mustard, minced garlic, and honey (if using).
Whisk or Shake:
Slowly whisk in olive oil until the vinaigrette is emulsified and smooth. If using a jar, shake vigorously.
Season:
Add salt and pepper to taste.
Serve:
Drizzle over salads, roasted veggies, or grain bowls.
Store:
Keep any leftovers in the fridge for up to a week. Shake before using.
