- Start by marinating your chicken breasts in a mixture of olive oil, honey, Dijon mustard, minced garlic, salt, and pepper. Let them marinate for at least 30 minutes, or overnight if you have time.
- Preheat your grill or grill pan over medium-high heat. Cook the chicken breasts for 6-8 minutes per side, or until they're cooked through and have a nice char.
- While the chicken is cooking, chop your mixed greens, cherry tomatoes, cucumber, red onion, and avocado and place them in a large salad bowl.
- Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
- Add the sliced chicken to the salad bowl and drizzle with honey mustard dressing.
- Toss everything together until well coated, and get ready to dig in!

Don't have a grill? No problem! You can cook the chicken in a skillet on the stove or even bake it in the oven.
