Ingredients
  

  • 4-5 lb prime rib roast bone-in
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon coarse salt
  • 1 teaspoon black pepper

Instructions
 

Preheat the oven:

  • Preheat your oven to 450°F (230°C).

Prepare the herb crust:

  • In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, parsley, salt, and pepper to form a thick paste.

Season the prime rib:

  • Pat the prime rib roast dry with paper towels.
  • Rub the herb mixture generously all over the roast, covering all sides.

Roast the prime rib:

  • Place the prime rib on a roasting rack in a roasting pan, bone-side down.
  • Roast at 450°F for 15 minutes, then reduce the oven temperature to 325°F (160°C) and continue roasting for about 1 1/2 to 2 hours, or until the internal temperature reaches 120-125°F (49-52°C) for medium-rare.

Rest the roast:

  • Remove the prime rib from the oven and loosely cover with aluminum foil.
  • Let it rest for 20-30 minutes to allow the juices to redistribute before slicing.

Serve:

  • Slice the roast and serve with your favorite sides, like mashed potatoes or roasted vegetables.
