Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 2 celery stalks chopped
  • 3 medium potatoes diced
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 4 cups beef broth low-sodium preferred
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 tbsp olive oil if needed

Method
 

Brown the Beef
  1. In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat if needed.
Sauté Aromatics
  1. Add diced onion and garlic. Cook 2–3 minutes, until fragrant and translucent.
Add Vegetables & Liquids
  1. Stir in carrots, celery, potatoes, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and Italian seasoning. Mix well.
Simmer
  1. Bring to a boil, then reduce heat and let simmer uncovered for about 25–30 minutes, or until potatoes and carrots are tender.
Add Frozen Veggies
  1. Stir in corn and green beans. Simmer for another 5 minutes, until heated through.
Season & Serve
  1. Taste and adjust with salt and pepper. Ladle into bowls and serve warm with crusty bread or crackers.
