Ingredients
  

For the Salad
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 4 cups mixed greens
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber sliced
  • ¼ cup red onion thinly sliced
Optional: fresh cilantro for garnish
For the Dressing
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp honey or agave
  • Salt & pepper to taste

Method
 

Season & Grill Shrimp
  1. Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium-high heat 2–3 minutes per side until pink and cooked through.
Prepare Salad Bowls
  1. Divide mixed greens among 4 bowls. Top with avocado, cherry tomatoes, cucumber, and red onion.
Make Dressing
  1. Whisk lime juice, olive oil, honey, salt, and pepper until combined. Drizzle over each salad.
Assemble
  1. Place grilled shrimp on top of each salad bowl. Garnish with fresh cilantro if desired. Serve immediately.

Notes

Meal prep friendly: Keep dressing separate until ready to serve.
Spicy option: Add a pinch of cayenne or chili powder to the shrimp seasoning.
Protein swap: Chicken or salmon can replace shrimp for variety.
