Ingredients
  

  • 1 Β½ cups orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • Β½ cup red bell pepper diced
  • ΒΌ cup red onion finely chopped
  • Β½ cup Kalamata olives sliced
  • Β½ cup feta cheese crumbled
  • ΒΌ cup fresh parsley chopped
For the Dressing:
  • ΒΌ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • Β½ tsp dried oregano
  • Salt & pepper to taste

Method
 

  1. Cook orzo pasta according to package directions. Drain and rinse under cold water.
  2. In a large bowl, combine tomatoes, cucumber, red bell pepper, onion, olives, and feta.
  3. In a small bowl, whisk together olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.
  4. Add the orzo pasta to the vegetables, pour over the dressing, and toss well.
  5. Garnish with fresh parsley and serve chilled.
