Ingredients
  

  • 1 Β½ cups orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • Β½ cup red bell pepper diced
  • ΒΌ cup red onion finely chopped
  • Β½ cup Kalamata olives sliced
  • Β½ cup feta cheese crumbled
  • ΒΌ cup fresh parsley chopped

For the Dressing:

  • ΒΌ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • Β½ tsp dried oregano
  • Salt & pepper to taste

Instructions
 

  • Cook orzo pasta according to package directions. Drain and rinse under cold water.
  • In a large bowl, combine tomatoes, cucumber, red bell pepper, onion, olives, and feta.
  • In a small bowl, whisk together olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.
  • Add the orzo pasta to the vegetables, pour over the dressing, and toss well.
  • Garnish with fresh parsley and serve chilled.
