Ingredients
  

For the base:

  • 2 cups cooked white rice or quinoa

For the gyro meat:

  • 1 pound ground lamb or beef
  • 1/2 onion finely chopped
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the tzatziki sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber grated and drained
  • 1 garlic clove minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or mint chopped
  • Salt and pepper to taste

For the vegetables:

  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives pitted and halved
  • 1/4 cup feta cheese crumbled
  • Optional additional toppings:
  • 1/4 cup hummus
  • Fresh parsley chopped
  • Lemon wedges

Instructions
 

Cook the rice or quinoa:

  • Prepare the rice or quinoa according to package instructions.

Prepare the gyro meat:

  • In a large bowl, combine the ground lamb or beef, finely chopped onion, minced garlic, dried oregano, ground cumin, ground coriander, ground cinnamon, salt, and black pepper. Mix until well combined.
  • In a large skillet, heat the olive oil over medium heat. Add the meat mixture and cook until browned and cooked through, breaking it up into small pieces as it cooks. This should take about 8-10 minutes.

Prepare the tzatziki sauce:

  • In a medium bowl, combine the Greek yogurt, grated cucumber (make sure to squeeze out excess moisture), minced garlic, lemon juice, olive oil, and chopped dill or mint. Mix until well combined. Season with salt and pepper to taste.

Prepare the vegetables:

  • While the meat is cooking, prepare the vegetables by slicing the cucumber, halving the cherry tomatoes, thinly slicing the red onion, and halving the Kalamata olives.

Assemble the gyro bowls:

  • Divide the cooked rice or quinoa among bowls.
  • Top each bowl with a portion of the cooked gyro meat.
  • Arrange the cherry tomatoes, cucumber slices, red onion, Kalamata olives, and crumbled feta cheese around the meat.
  • Add a dollop of tzatziki sauce on top.
  • Add optional toppings like hummus, fresh parsley, and lemon wedges if desired.
