Cook Carrots:
- Place carrots in a large pot and cover with water. Bring to a boil and cook 8–10 minutes, until just tender. Drain.
Make the Glaze:
- In the same pot, melt butter over medium heat. Stir in brown sugar, salt, and pepper until smooth and bubbling.
Glaze:
- Add the drained carrots back to the pot and toss to coat. Cook 2–3 more minutes, allowing the glaze to thicken and stick to the carrots.
Serve:
- Transfer to a serving bowl and garnish with parsley if desired. Serve warm.
Notes
Don’t overcook the carrots — they should be soft but not mushy.
Honey or maple syrup makes a great refined–sugar-free option.
Add a pinch of cinnamon or nutmeg for holiday flavor.
Use rainbow carrots for a colorful presentation.
