Ingredients

  • 2 lbs carrots peeled and sliced into coins (or baby carrots)
  • 4 tbsp unsalted butter
  • 3 tbsp brown sugar or honey/maple syrup
  • ½ tsp salt
  • ¼ tsp black pepper
Optional:
  • 1 tsp fresh chopped parsley garnish
  • Pinch of cinnamon for warmth
  • Squeeze of orange juice for brightness

Method

Cook Carrots:
  1. Place carrots in a large pot and cover with water. Bring to a boil and cook 8–10 minutes, until just tender. Drain.
Make the Glaze:
  1. In the same pot, melt butter over medium heat. Stir in brown sugar, salt, and pepper until smooth and bubbling.
Glaze:
  1. Add the drained carrots back to the pot and toss to coat. Cook 2–3 more minutes, allowing the glaze to thicken and stick to the carrots.
Serve:
  1. Transfer to a serving bowl and garnish with parsley if desired. Serve warm.

Notes

Don’t overcook the carrots — they should be soft but not mushy.
Honey or maple syrup makes a great refined–sugar-free option.
Add a pinch of cinnamon or nutmeg for holiday flavor.
Use rainbow carrots for a colorful presentation.
