Ingredients

  • 8 oz cooked spaghetti leftovers work great!
  • 2 tbsp olive oil or butter
  • 1 cup pasta sauce marinara or meat sauce
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 1 egg optional, for binding
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Optional add-ins: cooked sausage pepperoni, bell peppers, mushrooms, onions, or crushed red pepper

Method

Prep the Pasta:
  1. If using cold leftover spaghetti, break it apart with a fork.
  2. Mix spaghetti with sauce, mozzarella, Parmesan, Italian seasoning, garlic powder, and egg (if using).
Heat the Skillet:
  1. Add olive oil or butter to a nonstick skillet and heat over medium-high.
Fry the Spaghetti:
  1. Add the spaghetti mixture to the skillet and press it down into an even layer.
  2. Cook 5–7 minutes until the bottom is crispy and golden.
Flip (optional):
  1. You can flip the whole “spaghetti pancake” with a plate, or simply stir and let more edges crisp up.
Serve:
  1. Top with extra cheese, herbs, or a drizzle of sauce.
  2. Slice into wedges or scoop into bowls.

Notes

Best texture: Cold leftover spaghetti works better because it fries without becoming mushy.
Extra crispy: Don’t overcrowd the pan — a thinner layer = crispier spaghetti.
Make it cheesy: Top with extra mozzarella and broil for 2 minutes.
Protein boost: Add leftover chicken, meatballs, or ground beef.
Kid-friendly: Press into muffin tins and bake for mini spaghetti cups!
