Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup nut butter such as peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup add-ins such as chocolate chips, chopped nuts, dried fruit, coconut flakes, or chia seeds
  • 1 teaspoon vanilla extract optional
  • Pinch of salt optional

Instructions
 

  • Mix Ingredients: In a mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, add-ins, vanilla extract (if using), and a pinch of salt (if desired). Stir until all ingredients are evenly incorporated.
  • Shape into Balls: Using your hands or a cookie scoop, portion out the mixture and roll it into bite-sized balls. If the mixture is too sticky, you can wet your hands with water to prevent sticking.
  • Chill: Place the energy bites on a baking sheet or plate lined with parchment paper. Chill them in the refrigerator for at least 30 minutes to firm up.
