  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Food coloring optional

Method
 

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a bowl, sift together flour, baking soda, and baking powder. Set aside.
  3. In another bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla.
  4. Gradually blend in the dry ingredients.
  5. Divide dough into portions and add food coloring to each portion if desired.
  6. Roll out dough on a floured surface and cut into Easter-themed shapes with cookie cutters.
  7. Place cookies on prepared baking sheets and bake for 8 to 10 minutes, or until lightly golden.
  8. Allow cookies to cool on baking sheets for a few minutes before transferring to wire racks to cool completely. Decorate with icing or sprinkles if desired.
