  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Food coloring optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a bowl, sift together flour, baking soda, and baking powder. Set aside.
  • In another bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla.
  • Gradually blend in the dry ingredients.
  • Divide dough into portions and add food coloring to each portion if desired.
  • Roll out dough on a floured surface and cut into Easter-themed shapes with cookie cutters.
  • Place cookies on prepared baking sheets and bake for 8 to 10 minutes, or until lightly golden.
  • Allow cookies to cool on baking sheets for a few minutes before transferring to wire racks to cool completely. Decorate with icing or sprinkles if desired.
