Ingredients
  

  • 4 cups fresh dandelion greens washed and chopped
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ¼ cup crumbled feta cheese
  • ¼ cup toasted walnuts or almonds
  • 1 boiled egg sliced (optional)

For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & black pepper to taste

Instructions
 

  • In a bowl, whisk together olive oil, lemon juice, vinegar, mustard, honey, salt, and pepper.
  • In a large salad bowl, combine dandelion greens, tomatoes, onion, feta, and nuts.
  • Drizzle the dressing over the salad and toss well.
  • Top with boiled egg slices, if using.
  • Serve immediately and enjoy this fresh, slightly bitter, and nutrient-packed salad!
