Ingredients
  

  • 4 cups fresh dandelion greens washed and chopped
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ¼ cup crumbled feta cheese
  • ¼ cup toasted walnuts or almonds
  • 1 boiled egg sliced (optional)
For the Dressing:
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & black pepper to taste

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, vinegar, mustard, honey, salt, and pepper.
  2. In a large salad bowl, combine dandelion greens, tomatoes, onion, feta, and nuts.
  3. Drizzle the dressing over the salad and toss well.
  4. Top with boiled egg slices, if using.
  5. Serve immediately and enjoy this fresh, slightly bitter, and nutrient-packed salad!
