½ cup walnuts (or pine nuts)
½ cup Parmesan cheese (grated)
2 cloves garlic
½ cup olive oil
1 tbsp lemon juice
Salt & pepper (to taste)
Instructions
Blend the greens & nuts: In a food processor, combine dandelion greens, walnuts, and garlic. Pulse until finely chopped.
Add cheese & lemon: Mix in the Parmesan cheese and lemon juice. Pulse again.
Drizzle in oil: With the processor running, slowly add olive oil until smooth.
Season & serve: Add salt & pepper to taste. Enjoy over pasta, toast, or as a dip!
