Equipment

  • 2 cups fresh dandelion greens (washed and dried)
  • ½ cup walnuts (or pine nuts)
  • ½ cup Parmesan cheese (grated)
  • 2 cloves garlic
  • ½ cup olive oil

  • Salt & pepper (to taste)

Method
 

  1. Blend the greens & nuts: In a food processor, combine dandelion greens, walnuts, and garlic. Pulse until finely chopped.
  2. Add cheese & lemon: Mix in the Parmesan cheese and lemon juice. Pulse again.
  3. Drizzle in oil: With the processor running, slowly add olive oil until smooth.
  4. Season & serve: Add salt & pepper to taste. Enjoy over pasta, toast, or as a dip!
