Ingredients

cups
fresh dandelion flowers
no stems or leaves

water
1 ½
cups
sugar
or honey for a richer taste
½
tsp
lemon juice
Instructions
Rinse the dandelion flowers thoroughly to remove dirt and insects.
Boil the flowers: In a saucepan, add 2 cups of water and the dandelion flowers. Bring to a boil, then reduce heat and simmer for 20 minutes.
Strain & discard flowers, keeping the liquid.
Add sugar & lemon juice, then return to low heat. Stir occasionally and let it thicken for 10-15 minutes, until it reaches a syrupy consistency.
Cool & store: Pour into a jar and refrigerate for up to 2 weeks.
