Method
- Make Dough:
- In a large bowl, combine warm water, sugar, and yeast. Let sit 5 minutes until foamy. Stir in flour, salt, and olive oil to form a soft dough. Knead 5–7 minutes until smooth and elastic.
First Rise:
- Cover dough with a towel and let rise in a warm place for 1 hour or until doubled in size.
Prepare Filling:
- Mix cream cheese, crumbled bacon, and shredded cheddar in a bowl.
Shape Bagels:
- Punch down dough and divide into 8 equal pieces. Roll each piece into a ball, then flatten slightly. Place a spoonful of filling in the center and fold dough over, sealing edges. Shape into bagels (round with a hole in the center).
Boil (Optional but traditional):
- Bring a pot of water to a boil. Boil bagels 1–2 minutes per side, then remove and drain.
Bake:
- Preheat oven to 400°F (200°C). Brush bagels with beaten egg and sprinkle extra cheddar on top if desired. Bake 20–25 minutes until golden brown.
Cool & Serve:
- Let cool slightly before serving warm.
Notes
For softer bagels, brush with melted butter right after baking.
You can add chopped green onions or herbs to the filling for extra flavor.
If you prefer no-boil bagels, skip the water bath — they’ll still bake beautifully, though slightly less chewy.
Store leftovers in an airtight container or freeze for up to 2 weeks.
