Ingredients
  

For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
For the Cheesecake Filling:
  • 24 oz 3 packages cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
For the Apple Topping:
  • 2 large apples peeled, cored, and thinly sliced
  • 1 tablespoon unsalted butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
For the Caramel Sauce:
  • 1/2 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • Pinch of salt

Method
 

Prepare the crust:
  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
Make the cheesecake filling:
  1. In a large bowl, beat the cream cheese and sugar together until smooth.
  2. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
  3. Pour the cheesecake batter over the cooled crust, spreading it evenly.
Bake the cheesecake:
  1. Bake for 50-60 minutes, or until the center is just set and the edges are lightly browned.
  2. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour.
  3. Remove and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Prepare the apple topping:
  1. In a skillet, melt butter over medium heat. Add apple slices, brown sugar, and cinnamon.
  2. Cook for 5-7 minutes until the apples are soft and caramelized. Let cool slightly.
Make the caramel sauce:
  1. In a saucepan, heat the sugar over medium heat, stirring constantly until it melts and turns a golden amber color.
  2. Stir in butter until melted and smooth, then slowly add the heavy cream while stirring. Add a pinch of salt and cook for 1-2 minutes.
  3. Remove from heat and let the sauce cool.
Assemble the cheesecake:
  1. Top the chilled cheesecake with the caramelized apple slices.
  2. Drizzle the caramel sauce generously over the apples and cheesecake.
