Preheat Oven & Prep
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
Make the Dough
- In a bowl, whisk flour, baking soda, and salt. In another bowl, beat butter, sugars, peanut butter, egg, and vanilla until smooth. Gradually add flour mixture until combined.
Form & Roll Cookies
- Roll dough into 1-inch balls. Roll in granulated sugar and place on baking sheet, spacing about 2 inches apart.
Bake
- Bake 10–12 minutes until edges are lightly golden but centers are soft.
Top with Chocolate
- Immediately press a chocolate kiss into the center of each cookie while still warm. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
Make ahead: Dough can be chilled up to 2 days before baking.
Flavor twist: Sprinkle a tiny pinch of sea salt on top of the chocolate kiss for extra contrast.
Storage: Keeps in an airtight container for up to 5 days.
