In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks.
Once the beef is browned, add the diced tomatoes (with their juices), kidney beans, beef broth, tomato paste, chili powder, ground cumin, paprika, and dried oregano to the pot. Stir well to combine.
Bring the chili to a simmer, then reduce the heat to low. Cover the pot and let the chili simmer for about 30 minutes to allow the flavors to meld together.
Taste the chili and season with salt and pepper to taste. If you prefer a spicier chili, you can add more chili powder or a pinch of cayenne pepper.
Serve the Chili Con Carne hot, garnished with your favorite toppings such as shredded cheese, sour cream, sliced green onions, or chopped cilantro.
