Cook the Chicken
- Rub chicken breasts with olive oil, taco seasoning, salt, and pepper. Grill, pan-sear, or bake until fully cooked (internal temperature 165°F / 74°C). Let rest 5 minutes, then slice or dice.
Prepare the Dressing
- In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, lime juice, taco seasoning, and cilantro until smooth. Adjust seasoning to taste.
Assemble the Salad
- In a large bowl, layer greens, tomatoes, black beans, corn, bell pepper, onion, and avocado. Top with sliced chicken, cheese, and crushed tortilla chips.
Dress & Serve
- Drizzle dressing over the top just before serving and toss gently to combine. Garnish with more cilantro or lime wedges if desired.
Notes
Make it lighter: Swap mayo for extra Greek yogurt in the dressing.
