Ingredients
  

  • 4 bone-in skin-on chicken quarters (or a mix of thighs and breasts)
  • 3 tbsp olive oil
  • ½ cup grated Pecorino Romano or Parmesan cheese
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp red wine vinegar for finishing

Method
 

  1. Preheat Oven
  2. Preheat oven to 450°F (230°C). Line a baking sheet or roasting pan with foil for easy cleanup.
  3. Prepare the Chicken
  4. Pat chicken dry with paper towels. Rub with olive oil and place skin-side up on the baking sheet.
  5. Make the Savoy Seasoning Mix
  6. In a small bowl, combine grated cheese, minced garlic, oregano, paprika, salt, and black pepper.
  7. Season Generously
  8. Sprinkle the cheese mixture evenly over each piece of chicken, pressing gently so it adheres to the skin.
  9. Roast Until Crispy
  10. Roast for 40–45 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  11. Add the Signature Touch
  12. Right before serving, drizzle red wine vinegar over the hot chicken to create that signature tangy “Savoy” flavor.
  13. Serve
  14. Serve immediately with roasted potatoes, pasta, or a crisp green salad.

Notes

For extra crispiness, broil the chicken for 2–3 minutes at the end.
Pecorino Romano adds a sharper bite; Parmesan makes it milder.
