Ingredients
  

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the sauce choose one:
  • Sriracha mayo: 1/4 cup mayonnaise + 1 tablespoon sriracha sauce
  • Garlic aioli: 1/4 cup mayonnaise + 1 clove garlic minced + 1 teaspoon lemon juice
  • Tangy yogurt dip: 1/2 cup Greek yogurt + 1 tablespoon lemon juice + 1 teaspoon honey
  • 1/4 cup mayonnaise for the sauce
  • 1 tablespoon sriracha sauce for the sauce

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with oil.
  • Prepare Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Using a mandoline slicer or a sharp knife, slice the sweet potatoes into thin, uniform rounds.
  • Coat with Oil: In a large bowl, toss the sweet potato slices with olive oil until evenly coated. Season with salt and pepper to taste.
  • Arrange on Baking Sheet: Arrange the sweet potato slices in a single layer on the prepared baking sheet, making sure they don't overlap. This will ensure even baking and crispy chips.
  • Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the edges of the chips are golden brown and crispy. Keep an eye on them towards the end to prevent burning.
  • Make Sauce: While the chips are baking, prepare the sauce of your choice by combining the ingredients in a small bowl. Stir well until smooth and well combined.
  • In a small bowl, combine the mayonnaise and sriracha sauce.
  • Stir until well blended.
  • Adjust the amount of sriracha sauce to taste, depending on how spicy you like your sauce.
  • Serve alongside the baked sweet potato chips for dipping.
  • Serve: Once the sweet potato chips are done, remove them from the oven and let them cool slightly. Serve warm with the sauce for dipping.
