Ingredients
  

  • 2 cups cooked chicken breast shredded or diced (rotisserie works great)
  • 1/3 cup Caesar dressing store-bought or homemade
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp black pepper
  • 1 cup romaine lettuce finely chopped
  • 4 sandwich rolls ciabatta buns, or slices of crusty bread
  • Optional: 1/2 cup croutons crushed for crunch inside the sandwich
  • Optional toppings: sliced tomato extra Parmesan shavings

Method
 

  1. Make the Filling:
  2. In a large bowl, combine chicken, Caesar dressing, Parmesan, and black pepper. Mix until chicken is coated evenly.
  3. Add Lettuce:
  4. Gently fold in the chopped romaine lettuce. If adding crushed croutons, mix them in now for crunch.
  5. Assemble Sandwiches:
  6. Slice rolls or bread. Spoon chicken Caesar mixture onto the bottom half.
  7. Add optional toppings like sliced tomato or extra Parmesan shavings.
  8. Top with the other half of the bread.
  9. Serve:
  10. Serve immediately for best texture so the lettuce and bread stay crisp.

Notes

Make Ahead: Prepare chicken mixture in advance, but fold in lettuce and croutons right before serving to keep them crunchy.
