Activate Yeast:
- In a small bowl, combine warm water, yeast, and sugar. Let sit 5–10 minutes until foamy.
Make Dough:
- In a large bowl, combine flour and salt. Pour in yeast mixture and melted butter. Mix until a sticky dough forms.
Knead & Rise:
- Knead dough on a floured surface 5–7 minutes until smooth. Place in a greased bowl, cover, and let rise 1 hour until doubled in size.
Preheat Oven & Prepare Baking Soda Bath:
- Preheat oven to 450°F (230°C). Line baking sheets with parchment paper. In a large pot, bring 10 cups water and baking soda to a boil.
Shape Pretzel Bites:
- Punch down dough, roll into ½–inch thick ropes, and cut into 1–inch pieces.
Boil Bites:
- Drop dough pieces into boiling baking soda water for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
Bake:
- Sprinkle with coarse salt. Bake 12–15 minutes until golden brown.
Serve:
- Let cool slightly and serve warm with your favorite dipping sauces.
Notes
Soft & Chewy: Don’t overbake; pretzels continue to firm as they cool.
