Ingredients
  

  • 1 ½ cups warm water 110°F / 45°C
  • 1 packet 2 ¼ tsp active dry yeast
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 4 tbsp unsalted butter melted
  • 10 cups water
  • 2/3 cup baking soda
  • Coarse salt for sprinkling
Optional for Serving:
  • Mustard cheese sauce, or marinara for dipping

Method
 

Activate Yeast:
  1. In a small bowl, combine warm water, yeast, and sugar. Let sit 5–10 minutes until foamy.
Make Dough:
  1. In a large bowl, combine flour and salt. Pour in yeast mixture and melted butter. Mix until a sticky dough forms.
Knead & Rise:
  1. Knead dough on a floured surface 5–7 minutes until smooth. Place in a greased bowl, cover, and let rise 1 hour until doubled in size.
Preheat Oven & Prepare Baking Soda Bath:
  1. Preheat oven to 450°F (230°C). Line baking sheets with parchment paper. In a large pot, bring 10 cups water and baking soda to a boil.
Shape Pretzel Bites:
  1. Punch down dough, roll into ½–inch thick ropes, and cut into 1–inch pieces.
Boil Bites:
  1. Drop dough pieces into boiling baking soda water for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
Bake:
  1. Sprinkle with coarse salt. Bake 12–15 minutes until golden brown.
Serve:
  1. Let cool slightly and serve warm with your favorite dipping sauces.

Notes

Soft & Chewy: Don’t overbake; pretzels continue to firm as they cool.
Flavor Variations: Brush with melted butter and sprinkle with cinnamon sugar for a sweet version.
Make Ahead: Dough can be refrigerated up to 24 hours before shaping and baking.
Dipping Ideas: Cheese sauce, honey mustard, or marinara are all great options.
Extra Crispy: Bake on a preheated pizza stone if available.
