🥗 Vietnamese Chicken Salad (Gỏi Gà)

Ingredients
  

  • 2 cooked chicken breasts shredded
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 small red bell pepper thinly sliced
  • ½ cup fresh mint leaves
  • ½ cup cilantro leaves
  • ¼ cup chopped roasted peanuts optional
  • 2 green onions thinly sliced
For the dressing:
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 garlic clove minced
  • 1 small chili minced (optional)
  • 2 tbsp water

Method
 

  1. Whisk together all dressing ingredients until sugar dissolves.
  2. Toss cabbage, carrots, bell pepper, chicken, mint, cilantro, and green onions in a large bowl.
  3. Pour dressing over salad and mix well.
  4. Top with chopped peanuts just before serving.
