Ingredients
  

  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup for vegan version
  • 1 garlic clove minced
  • ½ tsp salt
  • ¼ tsp black pepper
Optional:
  • 1 tsp Italian seasoning or dried oregano for an herby twist
  • 1 tsp minced shallot for more depth

Method
 

  1. In a small bowl or mason jar, whisk together the balsamic vinegar, Dijon mustard, honey, garlic, salt, and pepper.
  2. While whisking (or with the jar closed), slowly drizzle in the olive oil until fully combined and emulsified.
  3. Taste and adjust seasoning as needed. Add herbs if using.
  4. Store in an airtight container in the fridge for up to 1 week. Shake well before each use.

Notes

Use high-quality balsamic vinegar and extra virgin olive oil for the best flavor.
This vinaigrette also makes a delicious marinade for grilled chicken or veggies.
Let sit for 5–10 minutes before serving to let the flavors meld.
