🥗 Pineapple Cucumber Salad Recipe Card

Ingredients
  

  • 1 medium cucumber thinly sliced or diced
  • 1 cup fresh pineapple diced
  • ½ small red onion thinly sliced
  • 1 red bell pepper diced
  • 2 tbsp fresh cilantro chopped
  • 1 –2 tbsp lime juice to taste
  • 1 tbsp honey or agave syrup
  • Salt and black pepper to taste
Optional:
  • 1 small chili finely chopped (for heat)

Method
 

  1. In a large bowl, combine cucumber, pineapple, red onion, red bell pepper, and cilantro.
  2. In a small bowl, whisk together lime juice, honey (or agave), salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently until everything is coated.
  4. Taste and adjust seasoning with more salt, pepper, or lime juice as needed.
  5. Chill in the refrigerator for 10–15 minutes before serving for extra crispness and flavor melding.

Notes

Use firm cucumbers like English cucumbers to avoid soggy salad.
Pineapple can be fresh or canned (drain if using canned).
Add chili or a pinch of red pepper flakes if you like a spicy kick.
For extra texture, sprinkle some toasted nuts or seeds on top before serving.
