Ingredients
  

  • 4 cups fresh arugula
  • 2 ripe nectarines sliced
  • ¼ cup crumbled goat cheese or feta
  • ¼ cup toasted walnuts or pecans
  • 2 tbsp red onion thinly sliced
  • 2 tbsp balsamic glaze or vinaigrette

Method
 

  1. Toss arugula, nectarines, red onion, and nuts in a large bowl.
  2. Sprinkle with crumbled cheese.
  3. Drizzle with balsamic glaze or vinaigrette right before serving.
  4. Serve immediately as a light lunch or refreshing side.
