Roast:
- Spread potatoes in a single layer on the baking sheet. Roast 30–35 minutes, flipping halfway, until golden brown and crispy.

Notes
Crispier Potatoes: Soak potato wedges in cold water for 30 minutes before roasting, then pat dry. This removes excess starch for extra crispiness.
Flavor Variations: Add smoked paprika for a smoky flavor, or toss with Parmesan cheese in the last 5 minutes of roasting.
