Ingredients
  

  • 2 lbs potatoes Yukon Gold or red, cut into wedges or thick slices
  • 3 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or rosemary
  • Salt & black pepper to taste
  • Optional garnish: chopped parsley or chives

Method
 

Preheat Oven:
  1. Set to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare Potatoes:
  1. Wash and cut potatoes into wedges or thick slices. Pat dry to remove excess moisture.
Season:
  1. Toss potatoes with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper until evenly coated.
Roast:
  1. Spread potatoes in a single layer on the baking sheet. Roast 30–35 minutes, flipping halfway, until golden brown and crispy.
Serve:
  1. Garnish with chopped parsley or chives and serve hot.

Notes

Crispier Potatoes: Soak potato wedges in cold water for 30 minutes before roasting, then pat dry. This removes excess starch for extra crispiness.
Flavor Variations: Add smoked paprika for a smoky flavor, or toss with Parmesan cheese in the last 5 minutes of roasting.
Air Fryer Option: Cook at 400°F (200°C) for 20–25 minutes, shaking halfway through.
Make Ahead: Roast potatoes partially, then finish crisping in a hot oven just before serving.
