Ingredients
  

  • 1 ½ lbs ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 6 medium russet potatoes peeled and thinly sliced
  • 1 10.5 oz can cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese plus more for topping
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley chopped (for garnish)

Method
 

Preheat Oven:
  1. Preheat to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook Ground Beef:
  1. In a skillet, heat oil over medium heat. Add onion and garlic; sauté 2–3 minutes. Add ground beef, season with salt, pepper, and paprika. Cook until browned. Drain excess fat.
Prepare Sauce:
  1. In a bowl, whisk together cream of mushroom soup and milk until smooth. Stir in Italian seasoning.
Layer Casserole:
  1. Place half of the sliced potatoes in the baking dish. Spread half of the beef mixture over them. Pour half of the soup mixture, then sprinkle with cheese. Repeat layers with remaining potatoes, beef, and sauce. Top with extra cheese.
Bake:
  1. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15–20 minutes until potatoes are tender and cheese is golden bubbly.
Serve:
  1. Let cool slightly, garnish with parsley, and serve warm.

Notes

Slice potatoes evenly and thinly (use a mandoline if possible) so they cook through.
Swap cheddar with mozzarella or pepper jack for different flavors.
Add frozen peas or corn between layers for extra texture and veggies.
Leftovers reheat well in the oven or microwave.
